I won't go into every single crazy dream I've dreamed...but let me tell you about this last one. <br />

I dreamed of my own death....I dreamed of my own death. Who does that? I mean, I dreamed of my own DEATH. I witnessed everyone at the funeral. Everyone was crying and I didn't understand why. I wanted everyone to know that I was okay and that everything was going to be just fine. But alas, I was convinced that maybe this was a time to be sad, and I cried along with them. <br />
<br />
Needless to say, I was FREAKED out! Like seriously freaked out. <br />
<br />
Until today. I told a friend about my dream and she said that I should look it up in dream interpretation. <br />
<br />
You want to know what my dreams are telling me: <em>"you are trying desperately to escape the demands of your daily life." </em><br />
<br />
HAHAHA!!<br />

I laughed. I'm under a lot of stress. And against popular belief that wedding planning is like one of the most stressful times of your life, I beg to differ! It has been a complete BLAST! Although I have moments...and seriously few moments of AAAHHHH how is this going to work, I'm enjoying this process. I won't go into what's really bothering me on the world wide web. <br />

I just thought that maybe if you found yourself in a tight spot...and you dreamed of your own death - don't fret. You're just trying to escape it. It's your mind coping with the fact that you're actually DESPERATE! <br />

Tonight, talking to my friend Toni about page 27 of the Barefoot Heart: Stories of a Migrant Child, brought on conversation and reminiscing of our childhood experiences with tortillas!<br />

Toni would wake up to her grandma in a cozy blue robe, patting at the dough and rolling it out into perfectly round masterpieces. Greg talked about having some warm tortillas with Mexican hot chocolate around the kitchen table. For me, it was my watching my gramma's super soft hands pinch the perfect amount of dough, patting it, and rolling it out...the sound of the rolling pin turning. Then the smell of the tortilla against the heated comal. Right off the comal, my gramma would put butter on it and roll it up for us. Or "helping" my mom make them. It was more of a white powder mess than anything...but that rolling pin - I want to inherit it. I can seriously imagine the view out of the kitchen window while my mom, my brother Aser and I made tortillas. Vivid memories. </div>

<strong><u>Highlights (In the order they occurred)</u>:</strong><br />

<li>Wedding planning with Greg, my mom and brothers. Yes, even the bro's have participated! LOVE it!</li>
<li>Went from the highest of highs (the most exciting Christmas break ever) to the lowest of low (crying due to a serious reality check - my job is hard). I'm okay. I just needed to readjust - quickly!. I hate that I'm a crier!</li>
<li>Friends from Guatemala, Toni and Stefan, are now living in Houston. It's been really fun to have them around!</li>
<li>Spent time with one of the sweetest and dearest people I know. My friend, Susanne. I've known her for about 13 years now! How the time flies!!</li>
<li>Yes, even though my job is hard - I experienced a Rudy moment on January 25! It was the best day of the school year to date. My kids have shown slow and steady progress. It is progress nonetheless and we sure did celebrate.</li>
<li>Spending time with my soon to be SISTER, Janie at the Bridal Soiree at the Royal Sonesta. I saw what I thought were my wedding colors in action and hated them! Thankfully, it's an easy fix...no final decisions have been made. She's been such a great sound board. </li>
<li>Greg and I booked a photographer. OMG. Greatest thing since sliced bread. I'm telling you, if you need a photographer, talk to Shane and Stephanie at <a href="http://www.iwiphotography.com/">Impact with Images</a>. It is a total blessing to have heard about them. July 13 needs to hurry up and get here!! :o) </li>
<li>We got our first gifts! One was a little, super thoughtful tin heart from my bestie, Jennifer (who might have opened her very own <a href="http://www.etsy.com/shop/ForTheSea">Etsy shop</a>!!)! And my parents got me a set of Calphalon Unison Nonstick pans! LOVE it! :o) </li>
<li>Ended the month with dinner at Chili's with my beautiful friends, Ashley Severance and Lara Sewart. We talked about orphans/adoptions - and how privileged we are to at some level be involved, among other things. I have to say though, that was my favorite topic of conversation that night. There's a lot of love to go around. I'm blessed by these two! :-D</li>

I did add some presents under the tree and I've gotta say this wrapping is my favorite. I had an oddly shaped present to give away and no box that was adequate for it, so I didn't have any other choice to up-cycle the bag that came with it. My mom and I went to some shops in Tomball. She fell in love with one of the Christmas signs. Rather than spending an arm and a leg, I told her that I'd make one for her. I'd have Greg's help to do the assembly part...and then I'd paint it. And so it goes...we created some Christmas signs for my mom and extras to give as gifts. </div>

This was one of my FAVORITES!! OMG!! So, I found this on Pintrest and had to try it out. It was funny to work in the kitchen, with spices, apple sauce and GLUE!! I can't remember who it was that was so shocked to know that I was putting GLUE in the food. HAHAHA!! These are cinnamon ornaments and they smell DIVINE!!! WOW! Super easy. Doesn't take long. Pop 'em in the oven...and your house will smell like Christmas forevermore!! :o)</div>

And last but not least! I started working on this maybe 3 years ago. No, it didn't take that long to make (although it's a serious time commitment...just not 3 years worth). I had cut all the pieces including the batting and had not made a plan for it. Well, when there is no vision the people parish...and my desire to complete this sucker had gone with the wind. I put it away and it wondered if it would ever finish itself! Since it never did, and it was taking up space I decided during Thanksgiving time, "IT'S NOW OR NEVER!!!!" I unstitched the crappy stitches I had started. Counted each square with tender loving care and made a plan. Once the plan was in place, it didn't take long! I got to enjoy it over Christmas!!! It's cozy!! :O) </div>

After returning this January from such an exciting break (I AM ENGAGED!!), I have cried once a week in relation to how I feel about my job. I love teaching, and interacting with my kids. We have amazing rapport and the improvement in behaviour is astounding! Really. I mean it. But at the same time, it takes everything in me to keep it together sometimes. It's a heavy LOAD. <br />
<br />
I have a very difficult assignment...and it's hard to focus on the positives sometimes. <br />
<br />
But today, a beautiful, bright springlike day...<strong>Hope has sprung!</strong> My kids and I did a side by side comparison of tests they took in October to one they took recently. What did we see? <br />
<br />
Progress, my friends. Progress. It's like water when you're parched. A cool breeze when you're hot. Fresh air after a stink. PROGRESS!!<br />

I stood in front of my class and gave a speech:<br />

My kids cheered! They CHEERED! And some of them were tearing up with me!! It was a RUDY moment. I love having RUDY moments. I know they aren't every day, but I have to remember...RUDY moments EXIST. They do happen!!<br />

Those nights were rough, but they led to a deeper love of those kids and a greater appreciation for those who work with them on the regular. <br />

1. Still working on reading my bible on a daily basis. I'm doing much better to date. <br />

2. My time on Pintrest increased. However, I haven't just been pinning. I've actually made a lot of things...used advice...done some kick A$$ work outs. I mean...seriously. <br />

3. Doing much better on making my bed. Still not on a daily sched though. <br />

4. No more running for me. Until I figure out whats up with my left foot and right knee. I miss running like you wouldn't believe. I cry sometimes. Yeah - but it's okay. I'm okay. <br />

5. I laid off the lists, but I'm back at 'em full force. It's incredible how dependent I am on them. <br />

6. I didn't finish paying my student loan debt. However, It has SIGNIFICANTLY decreased. I have to scale back a little since I'm planning a wedding. :o) The loan will be paid off though - soon enough!!<br />

Since I started teaching, I felt like my creativity relating to crafts was zapped. I realized now that it wasn't necessarily zapped...it was just that my energy level was at an all time low, there was none left over to think creatively. Sure - I had creative moments, but not so consecutively as I'm having them now. <span style="font-size: xx-small;">(Is my earlier bed time and freer schedule paying off? I THINK SO. On so many levels!!)</span><br />

For Thanksgiving, one of my aunts asked if I would work on the table decor for the family gathering. I responded with a resounding, "ABSOLUTELY!" I quickly went to the nearest craft store (aka HOBBY LOBBY) and went to town. The most important thing on the list was BURLAP! <br />

<span style="font-size: xx-small;">side note: Did you know burlap is incredibly affordable? And there's <a href="http://pinterest.com/search/pins/?q=burlap">so much you can do</a> with it!!</span><br />

When I came home, I went to town folding and pressing what would later be the seam. On another day, I went over to my friend Ashley's house where I stenciled "GIVE THANKS" on the table runners while she spray painted walnuts into autumn's perfect gold. And finally, dusted off my old sewing machine and FINISHED!! <span style="font-size: xx-small;">(finishing a project is a big deal!!)</span><br />

While she was there, the middle aged man in front of her ordered his food as if he was the commanding officer of a Nazi regiment. Quickly, the workers got his food together and presented it to him as if they were wilted petunias in direct heat of the afternoon sun. This man started barking: "WHY DID YOU GET MY ORDER WRONG? IT'S ALL WRONG! IT WOULD HELP IF YOU SPOKE ENGLISH! WE'RE IN F***ING AMERICA!"<br />

As the staff scrambled to check the order, my brave mother says, "We are in AMERICA! THE LAND OF THE FREE!" <br />

The man continued barking and my mother said it again a little louder: "WE ARE IN AMERICA! THE LAND OF THE FREE!" <br />

After the McDonald's employees got things sorted it with the sour puss, my mother - with some serious pants on - walked up to the man and said, "Sir, she speaks English. Even a native English speaker could get the order wrong every now and then. You need to show a little more respect." <br />

He continued with his "we're in America" speech, when a lady from the community, friend of my mother's who happened to be there, chimed in: "Don't ignore what she is telling you! These people are working. And the lady who is talking to you is a tax paying citizen. Just because they aren't white like us doesn't mean they don't deserve your respect." <br />

The man left still fuming because those damn Mexicans screwed up his order. My mother and her friend (let's call her Suzy), who she met working the voting polls, continued talking about how appalled they were at his behavior.<br />

Suzy asked my mom - Have you seen that show? What happened is just like that show!! <a href="http://abcnews.go.com/WhatWouldYouDo/">What would you do</a>? Where are the cameras?<br />

I prepared the tuna differently every day to provide a bit of variation, but I have to say that tuna with fresh squeezed lime and some cayenne pepper is my favorite. <br />

In one container I put all the veggies:<br />

<li>romaine lettuce</li>
<li>colorful bell peppers</li>
<li>carrots</li>
<li>cucumbers</li>
<li>tomatoes</li>
</ul>
In another container I had the tuna and pepperoncinis!!<br />
<br />
At lunch, I built my wrap and MMMMmmmmm it was tasty! <br />
<br />
For snack I had grapes and an apple. <br />
<br />
The only downside to having tuna wraps was that it took forever to pack. I didn't really want to cut up some of these veggies for fear that it would get soggy and gross...cucumbers and tomatoes specifically. So I waited until the morning to cut what I had rationed for the day. OMG - my morning was TIGHT!!<br />

I'm currently OBSESSED with the Biggest Loser. It streams online via Netflix and I have become friends with Bob and Jillian...Just like I became friends with the characters from the book - THE HELP. I talk about them at the dinner table. <br />
<br />
Anyway - as I've been told since I stopped eating breakfast in high school due to NERVES and being unable to stomach anything in the morning, they recommend eating breakfast. They go on and on about the instant QUAKER oatmeal...but I am not an instant oatmeal girl. I'VE TRIED!! (Okay - unless it's from McDonald's - what they heck do they add to it? It's GOOD!)<br />
<br />
I get the old-fashion oats and whatever I want in my oatmeal ready the night before so I'm not panicking about running late. In the morning, I add water...nuke it...stirring every 30 seconds so it doesn't explode all over the microwave...and then add a tablespoon of honey and lots of BERRIES! Strawberries and Blueberries. <br />
<br />
I haven't enjoyed breakfast like this in a LONG LONG TIME! I'll be switching out the fruit. I think I'm going to try mango next week. :o)<br />

This week I made my favorite bean dip that I've <a href="http://delightfulsurprises.blogspot.com/2011/06/its-goodits-real-good.html">written</a> about once before. Although I made some very slight changes....<br />
<br />
In order of what I put in the mixing bowl: <br />
<ul>
<li>1 Tablespoon Olive Oil</li>
<li>1 Tablespoon Tabasco</li>
<li>1 Lime - squeeze the ever living juice out of that sucker!</li>
<li>1 clove of garlic</li>
<li>1 jalapeno (take out the seeds and cut out the veins as much as possible</li>
<li>1 green bell pepper</li>
<li>1 red bell pepper</li>
<li>2/3 bunch of cilantro</li>
<li>1 red onion</li>
</ul>
Stir/toss to make sure you have the OO, Tabasco and Lime juice all over the veggies. <br />
<ul>
<li>1 small can of corn</li>
<li>1 can of kidney beans</li>
<li>1 can medium size can of black beans</li>
</ul>
Stir/toss (what's appropriate here?) again and EAT to your hearts content!<br />
<br />
I also packed some tositito bowl chips (counted to the very last one - packed on the weekend ready to go.)<br />
<br />
For snack I had a cheese stick and an apple. <br />
<br />
Oh - and one of my friends brought in oranges covered in chili powder (Tajin). OMG! I only ate one slice because I was sooo full from my own lunch. But I ended up craving that so much I had some at home. DELICIOUS SNACK!!<br />

But I'm a school teacher and it's rough in the afternoons. I used to turn to Coke for a pick me up but I found that Crystal Light has the energy mix with CAFFEINE!! Oh and one other thing...I'm totally into grinding two tablespoons of flax seed and putting it in my water in the mornings. LOVE IT! I don't know if you'd like it, but you should try it. What I like is flax seed, apple slices and a cinnamon stick in my water....TASTY, REFRESHING and SOOO good for you!!<br />

It's a lot of fresh food! Very filling! Very good lunch. Some of it I ate for an afternoon snack. Delicious!<br />
<br />
On a scale of one to 5, how did it help in my efforts? FIVE! Thank you very much. <br />

Okay...Do you see all the exclamation points??!?!?! It's because I actually want to SQUEAL in excitement when I talk to kids about reading! My hope is that it transmits to my students. <br />

Last year, the last read aloud I chose was Roald Dahl's - <a href="http://www.amazon.com/BFG-Roald-Dahl/dp/0142410381/ref=sr_1_1?s=books&ie=UTF8&qid=1345770928&sr=1-1&keywords=the+bfg">The BFG</a>. It is such a fun book!! The only problem is that time ran out and we didn't finish reading it. We had a few chapters left to read. What I should have done was skip some chapters and read the last one to give them some closure. I didn't give it to them, so they sought their own. <br />

I didn't notice one bit, until I set up my classroom library this week, that more than HALF! of my class set of the BFG is missing! <br />

Do you see what I mean? I inspired these kids to STEAL for the finish! <br />

I'm not upset by it. so loudly to the boy who was sitting on the bunk next to him and then belly laughing...And finally –
this kid. OMG. This one kid jumps out of bed crawls towards me and starts
barking like a dog! He even got close enough to my ankle and pretended he was
biting my leg. <o:p></o:p></span></span></div>

Believe me I would!) </span>I go down to Casa Bernabe and the only books I see the kids have is either their Bible or the workbook from school. <br />

Love it so much she talks nicely about it and she does everything to take care of it! That God the Creator of the Universe decided she would be the only person that was HER!<br /><br />In order to do that, I have to set the example...and BELIEVE IT!<br /><br />In high school, I overheard some guys talking about the girls saying that they actually thought I was prettier than one of the popular girls in the face, but I needed to lose weight! (I WASN'T FAT!) So I observed what people ate and how they ate it. I'd make mental notes of those who were overweight and those who I thought looked perfect - and then I'd put the notes to practice by asking: What do I want to look like? What should I eat? How should I eat it? Truth be told - I've never really been able to eat like those I think look perfect! I LOVE FOOD WAY TOO MUCH!<br /><br />In college, I gained weight. I don't know if anyone escapes the freshman 15! Do you know of anyone? Anyway, I overheard some guys, my supposed friends, say to each other that I would be pretty if I lost a couple pounds. One guy even suggested I put on his belt just so he could see what hole I'd use...JERK!<br /><br />In Korea, I gained weight. My piano teacher told me straight up that I had a pretty face, but my body was horrible. Post Korea, I lost weight (I was depressed) and then gained it back when as I was feeling happier. My brother told me that some guys told him, that I would be pretty if I lost some weight. I ended up gaining more!<br /><br />I lost a bunch of weight in 2009, after I left a job that was going south and even more when I started working retail! I know for a fact that retail got me thin quick because I couldn't stop working even though I was hungry and also because I moved, lifted, carried, sorted so much crap in such a small amount of time. It was seriously four hour workouts every time I went in.<br /><br />Unfortunately, I gained it ALL back (plus more) when I became a teacher. I stopped working out as often because I am so doggone tired at the end of the day or I'm always doing something or meeting up with friends that involves FOOD!!<br /><br />I also gain every time I travel even if I'm not eating every carb that comes in sight. For whatever reason traveling makes me gain! I hate that bc I do enjoy traveling! So - I have to figure out WHY!!<br /><br />For the record, I want to say that I never once cried about what these people had to say. Coming from a straight shooting Mexican family, I took it in, shrugged my shoulders and kept walking. I've always thought that what doesn't kill you makes you stronger. They were helping me get stronger because people will always say what they want about me and I'll never be JUST right for them...People always have their opinions and they are always changing. I did actually chew one person out for it! I think by that time I was tired of hearing the same comments from people who say they "care" but have no idea what's going on with me.<br /><br />Unfortunately, in my late twenties - and in a week, my thirties - I've not only gained weight, but grew a belly! Every year, I set a goal to lose weight but never ever set a plan to accomplish it. For me - a list maker - it DOES NOT WORK. Doesn't even work short term....Setting a goal without a plan is like waiting to do it tomorrow. We all know that tomorrows like that never come! What in the world will my life look like if I step in this or that direction? What will I miss if I don't walk this way or that way? What will I have to let go of? What will I gain/lose? What hats will I be wearing here or there?<br /><br />The questions are forever long.<br /><br />At one point the direction was clear...and it turns out that now it isn't so clear. Why isn't it? Is it a distraction? Is it a closing door? Is it the pressure to build character (sweeter wine)? Why do I feel SCARED to go in either direction?<br /><br />There's a hymn that says: Trust and obey for there's no other way to be happy in Jesus, but to trust and obey.<br /><br />The thing is that I don't know what direction is "obedience."<br /><br />I've asked for wisdom. I got to go to Guatemala for a month this summer. I found my <span id="SPELLING_ERROR_0" class="blsp-spelling-corrected">niche</span> in teaching - 4<span id="SPELLING_ERROR_1" class="blsp-spelling-error">th</span> grade ESL! I paid off my credit card debt! ON TO THE STUDENT LOANS! The traditions we have as a family were totally awesome this year! It's like we all craved it and made sure it <span id="SPELLING_ERROR_2" class="blsp-spelling-corrected">happened</span>...right down to the punch with sherbet at Christmas!! :o)<br /><br />I didn't accomplish weight training or braces...there was NO PLAN! And my 30 before 30 list is pretty much out the window...again no plan. But perhaps I'll do a daring 40 before 40 list. <span id="SPELLING_ERROR_3" class="blsp-spelling-error">HAHAHA</span>...10 years to accomplish WORLD PEACE!<br /><br />This was the best year EVER! This coming year I'm turning 30 and I have a feeling it will be even better!! I really can't wait!! 30 is going to be my new 25! I loved 25.<br /><br />So...moving along to the NEW YEAR!<br /><br /><span style="font-size:180%;">HAPPY 2012! The Year of Going Back to Basics!</span><br /><br />It seems like the older I get the more time flies. And the more I think I should simply. I also think a lot about how important it is to declare that Jesus is my life more publicly. Sure, everyone that knows me knows this about me. What you may not know is that sometimes I really struggle with even going to church...or reading my bible...or praying. It SUCKS! Because as much as it is a struggle, I know that JESUS is my TRUE source of JOY in my life. Maybe I'll share my testimony some time on this Delightful Surprises...<br /><br />This year, rather than thinking about simplifying and prioritizing, the plan is to actually DO IT! So what does that mean or even look like? I'm not 100 percent sure, but I have some things in mind.<br /><br />Here's what I have to set the tone for the year...<br /><br /><strong>THEME VERSE for 2012:</strong><br /><br />Therefore, since we also have such a large cloud of witnesses surrounding us, let us lay aside every weight and the sin that so easily ensnares us. So, as you read following one of these plans, it shows your progress on this little bar...I'm so excited, because not only do I want to read my Bible, but I also like progress. So not only will I have intangible rewards, I'll also have a little bar that will say: "<span id="SPELLING_ERROR_4" class="blsp-spelling-error">Mims</span>, you're making progress!" :o)<br />On a serious note, I think one of the problems I have is that my LOVE for literature often has me overlook the BOOK. I'm missing out on the perspective, direction, guidance it gives.<br />Does this mean that I won't be reading other books for fun? Absolutely not. It just means that I want to make sure to read my Bible...INTENTIONALLY!</li><li><strong>Less time on <span id="SPELLING_ERROR_5" class="blsp-spelling-error">Facebook</span> and <span id="SPELLING_ERROR_6" class="blsp-spelling-error">Pinterest</span>.</strong> This is HUGE. Like ENORMOUSLY huge. I've noticed that I am not as creative as I know that I can be. And I've also noticed my <span id="SPELLING_ERROR_7" class="blsp-spelling-corrected">absorption</span> to <span id="SPELLING_ERROR_8" class="blsp-spelling-error">FB</span> and <span id="SPELLING_ERROR_9" class="blsp-spelling-error">Pinterest</span>...almost to the point of neglecting the people I have around me. Not to mention wasting lots of time. In order to accomplish this, I deactivated my <span id="SPELLING_ERROR_10" class="blsp-spelling-error">FB</span> account and removed both the <span id="SPELLING_ERROR_11" class="blsp-spelling-error">FB</span> and <span id="SPELLING_ERROR_12" class="blsp-spelling-error">Pinterest</span> apps from my phone. COLD TURKEY! So I suppose this is to be more <span id="SPELLING_ERROR_13" class="blsp-spelling-corrected">intentional</span> with my time, things and people around me rather than checking status updates and things I could possibly do instead of actually doing them.</li><li>This one is something I used to do...that I miss. And you may laugh. It's kind of silly...But here it is...I want to <strong>make my bed every morning</strong>. (insert bashful face) There's a discipline that I've lost along the way. I'm not sure why? Maybe waking up too late and rushing out the door? Like I said...I'm going back to BASICS!</li><li>I would like to<strong> run one half-marathon</strong>. I haven't been running very much. I don't know if it's possible to go back, but I want to do it. I have a race in mind, but I'll reserve the date for later. </li><li><strong>Lay off the lists. </strong>I love lists! I do, but sometimes I like them so much that they <span id="SPELLING_ERROR_14" class="blsp-spelling-corrected">paralyze</span> me. I want to be a bit more spontaneous. </li><li><strong>Significantly decrease the Student Loan Debt.</strong> I really wanted to finish by my 30<span id="SPELLING_ERROR_15" class="blsp-spelling-error">th</span> birthday, but it'll probably happen for my 31st which is just fine. I really can't wait!! </li><li><strong>Braces? </strong>I'm such a wimp when it comes to pain....and I hear this hurts!!</li></ol><p>That's all folks.
